For a unique and gastronomic recipe, discover the revamped version of chickpea flour flatbread served with turmeric hummus.
Mix the flours, cream, salt, baking powder, milk, and eggs in a mixing device.
Strain and let rest in the refrigerator overnight.
Cook the soccas in a lightly oiled pan until browned. Set aside.
Just before serving, make them crisp by placing them on the grill.
For the hummus: Blend the cooked chickpeas, sesame, sesame oil, lemon juice, garlic, turmeric, salt, and pepper. Whip in a bit of olive oil. Strain and set aside in a pouch.
To finish, top the socca with hummus, sprinkle with chopped chives, and season generously with pepper.
