A slowly cooked red onion compote, similar to a chutney, to accompany terrines, cheeses, and why not, pâté!

Ingredients
 6 Sliced red onion
 140 Brown sugar
 14 Balsamic vinegar
 14 Olive oil
 60 Water
Directions

Put all the ingredients in a pot, bring to a boil, then lower the heat and let it simmer gently for at least an hour, until the onions are tender and caramelized. When there is almost no liquid left, stir frequently with a wooden spoon.

To finish, put into jars after cooling.

    A real treat. I'm not particularly fond of onions, but with this recipe, I could eat them every day... A little personal touch, a bit of honey 15 minutes before the end of cooking.

    Typical of the southwest! Accompaniment for chicken (onion chicken). Prefer copper, no oil, and maybe some balsamic... but especially more sugar!

    Not bad at all! Very easy recipe and a nice result. My suggestion: I didn't use 14cl of oil but just a little bit in the bottom of the pan. And I added a bit of ginger and cinnamon.

    Puff pastry Very, very good recipe My suggestion: I work in catering and I made something delicious: Make this recipe, then cut small squares of puff pastry and bake them by putting balls in the middle to create a space once the pastry is cooked. Put the red onion compote inside, then add two slices of goat cheese. Place everything in the oven and enjoy hot with a small salad and a light red wine.

    Super!! A success every time My suggestion: I add a bit of cream liqueur, some raisins or dried cranberries, and a hint of spices (cinnamon, ginger, mixed spices).
