For the skewers
 2 Large egg
 100 Fine breadcrumbs
 20 Golden sesame seeds
 1 Chives
 1 Dill
 20 Cherry tomato
 1 Basil
 1 pinch Salt and pepper
 1 dash Olive oil
For the sauce
 1 jar Red bell pepper
 1 clove Garlic
 1 Thick sour cream
 1 Organic lemon

Preparation of the ingredients. Start by cutting the cheese into large pieces. Break the two eggs and beat them in a separate shallow dish. Pour the breadcrumbs into another dish with the sesame seeds. Chop the chives and dill together, then add them to the breadcrumb mixture.

Assembly Roll the cubes of Emmental cheese in the egg for the first time, then in the breadcrumbs, and then roll the cube in the egg again and a second time in the breadcrumbs. Set the cubes aside on a board.

Cooking Heat a generous amount of olive oil in a flat-bottomed pan or on your griddle if cooking outdoors. Brown each side of your cubes of cheese over low heat.

Preparation of the sauce Meanwhile, drain the peppers, then blend with the peeled and germ-free garlic clove, the cream, salt, and pepper, as well as a few basil leaves. Zest the lemon over the sauce. Reserve the sauce in a bowl in the fridge.

Once all the croquettes are golden, skewer them with a tomato and a basil leaf. Serve hot with the sauce.
