Porridge has been a part of the Scottish breakfast for centuries. This dish, which can be sweet or savory, is traditionally made with oats soaked in milk. This recipe is extracted from the book Healthynomie Ed. Menu Fretin. Text and photo credit: ©Author / Passion Grains.
Wash the apples, core them, and cut them into small pieces.
Rinse the blueberries.
With the tip of a knife, split the vanilla pod lengthwise.
Pour the milk and the vanilla bean into a saucepan and bring to a boil. Reduce to low heat and add the oats. Add the diced apple and let cook for 5 minutes, stirring with a wooden spoon.
To finish, add the blueberries and maple syrup. Pour into bowls and sprinkle with chopped pecans.
