For our Valentine's Day, I wanted to discover with my partner the flavors of a dish that's said to be exceptional: caviar! For the appetizer, I prepared a very simple amuse-bouche, but in my opinion, very elegant: these small potato bites are topped with a dome of whipped cream enhanced with vodka and finished with a touch of caviar.
Wash the potatoes, do not peel them. Steam them for about twenty minutes. Whip the very cold cream into stiff peaks. Add a splash of vodka. Set aside in the refrigerator. Cut the potatoes into pieces about 1.5 cm thick. Lightly salt them. Place a dome of whipped cream on the potatoes, then a spoonful of caviar. Arrange your plate: place 2 or 3 caviar bites next to a small shot of very cold vodka.
