Ingredients
 8 Ripe melon
 1 Candied sugar

Remove the skin from the melons and then roughly chop the flesh.

Put it in a pot with a minimum capacity of 8 liters to prevent it from overflowing.

Immediately pour in the sugar.

Place it over medium heat and stir.

Once boiling, cook for 20 minutes and lower the heat.

To finish, there’s no need to use a food mill; the melon melts on its own. Stir well during cooking.

    Melon loses a lot of flavor during cooking, so I add two sticks of cinnamon, 2g of vanilla, the juice and zest of one lemon, and a small glass of rum added halfway through cooking; it's much better. The same recipe works for pear preserves, adding whole pepper and saffron.

    Good, but without more. Not bad but too watery, and yet I did evaporate the water well, then I was disappointed. I don't know; my friend didn't like it either, but I have a friend who loved it. Mixed reviews!

    Too liquid when using a kilogram of cut melon for a kilogram of sugar! I find my jam "failed," I will make it again using 800 g of melon for 1 kg of sugar, I think it will be a bit thicker. The one that is liquid, I will use it in plain yogurt or cottage cheese!
