Today I suggest a pasta dish with mushrooms in tomato sauce. A very tasty vegetarian dish, in Mediterranean style. Perfect for a weeknight dinner.
Cook the linguine al dente according to the package instructions. Reserve 250 ml of the cooking water, then drain the pasta.
Prepare all the ingredients. Peel and chop the onion and garlic. Clean and slice the mushrooms. Finely chop the rosemary if it's fresh. Coarsely chop the nuts. Chop the parsley.
Heat a large pan with olive oil and butter. Add the onion and garlic and cook for 2 minutes, stirring.
Add the mushrooms, salt, pepper, and rosemary and cook for another 10-12 minutes.
Add the tomato paste, white wine, and 150 g of cooking water. Continue cooking for 4-5 minutes over medium heat.
Add the pasta and mix well to coat. If needed, add a little more pasta cooking water. Cook for 2 minutes to heat through.
To finish, remove from heat, add the parmesan, nuts, and parsley, mix, and serve immediately.
