The day before, prepare the brioche dough. In a mixing bowl, combine flour, yeast, sugar, and salt. Incorporate the eggs while continuing to knead until a ball forms. Add the orange blossom water, then the butter. Set aside the slightly greased dough ball, cover with plastic wrap, and place in the refrigerator until the next day.
Knead the dough for a few minutes. Hide the bean and let it rest for 5 minutes. Make a hole in the center and stretch it to form a large ring.
Place on a baking sheet lined with parchment paper and let rise for 1 hour. Using a brush, coat with milk and sprinkle with pearl sugar.
To finish, bake at 180 °C for 15 to 20 minutes.
