For the pancakes
 50 Sugar
 3 Egg
 50 Milk
 80 Semi-salted butter
 1 Optional rum
For the chocolate sauce
 150 Dark chocolate
 10 Semi-skimmed milk

Prepare the chocolate sauce: melt the chocolate in the microwave on low power. Pour the warmed milk over it, but not boiling, and mix.

Prepare the pancakes: In a mixing bowl, combine the gluten-free flour blend with sugar.

In the meantime, beat the eggs and mix with the milk. Incorporate into the previous mixture. Finally, add the melted butter and the rum.

Heat a non-stick skillet and lightly oil it. Pour a ladle of batter into the skillet, spread it out, and wait for it to cook on one side before flipping it. Cook all the pancakes this way over low heat.

Serve with chocolate sauce. If it is too thick, heat it in the microwave on low power.
