Poaching the cod Poach the cod in a pot of unsalted water for 10 minutes. Rinse it under cold water and flake it, removing all the bones.
Preparation of the aromatics Peel and chop the shallots and garlic cloves. Blend everything with parsley and thyme.
Mix the ingredients. Combine the cod and the minced meat.
In a mixing bowl, vigorously mix the flour, baking powder, egg, and milk. When the batter is smooth, add the finely chopped chili and the cod mixture. Let it rest for an hour at room temperature.
Cooking the fritters. Heat the peanut oil and drop small amounts of batter into the oil (about a teaspoon). Cook the fritters until they are golden brown on all sides and well puffed up... Serve hot!
