Easter Nest Brioche Recipe

Discover these Easter nest brioche rolls. I had fun making these small rolls with their unique and festive shape. The chocolate eggs are hidden in the soft brioche nests.

Brioche dough
 500 Flour
 180 Milk
 100 Softened butter
 2 Egg
 80 Sugar
 ½ Salt
 1 Baking powder (or 20 g of fresh yeast)
Glaze
 Pearl sugar
 Colorful sugar balls

Pour the warmed milk into the bowl of the mixer and add the yeast. Mix, then add the sugar, eggs, flour, and salt, and knead for a few minutes with the hook. Add the butter and knead again until the butter is fully incorporated and the dough is smooth. About 15 minutes. Then let it rise for about 2 hours, covered with a cloth in a warm place. The dough should double in size.

Shaping: Dust a work surface with flour, then degas your brioche dough by kneading it lightly. Divide it into small pieces of about 50 g each. Roll each small piece into a long sausage of about 25 cm. Take two strands and braid them, then form a crown by joining the ends together. Do the same with the remaining sausages. Place your crowns on a baking sheet lined with parchment paper. Cover with a clean towel and let rise for 1 hour, away from drafts.

Brush the crowns with a beaten egg, and sprinkle them with small candy or granulated sugar. I didn’t put colored eggs in the center because I had another idea. I made eggs out of aluminum foil and placed them in the center to hold the nest during baking. Put them in the oven that you have preheated to 180° C and bake the brioche for 20 minutes. After baking, let the brioche cool on a wire rack and then enjoy!
