Ingredients
 2 onions
 3 ripe marmande tomatoes
 6 beautiful chicken fillets
 1 large can of peeled tomatoes
 40 coconut milk
 2 curry paste
 1 large piece of fresh ginger root about 4 cm
 1 cinnamon stick
 2 neutral oil
 1 lime
 1 bunch of fresh cilantro
Directions

Peel and then chop the onions. Peel and then grate the ginger. Peel the tomatoes and cut them into wedges. Wash the cilantro.

In a pot, sauté the onions in the oil. Add the ginger and cinnamon. Then add the curry paste and mix well.

Cut the chicken fillets into pieces. Add them to the pot and sauté for a few minutes. Add the peeled tomatoes, fresh tomato wedges, and coconut milk. Let cook for 20 minutes on low heat.

Add the zest of the lime and then the juice. Season with salt and pepper. Sprinkle the dish with chopped fresh cilantro just before serving. Serve with basmati rice flavored with lime.
