Here is the recipe for creamy gnocchi with bacon and mushrooms.
Heat a large skillet dry over high heat. Add the bacon and sauté for 2-3 minutes.
Meanwhile, clean the mushrooms with a damp paper towel, then cut them into thin slices. Finely chop the garlic and parsley.
Add the mushrooms and garlic to the skillet and sauté for 3-4 minutes, stirring regularly. Lower the heat if they stick. Add the gnocchi and half of the parsley, and sauté everything for another 3-4 minutes. Pepper to taste.
Add the fresh herb cheese and tear the mozzarella over the skillet. Stir for 1-2 minutes, or until the cheese is melted, gooey, and everything is nice and creamy.
Place the salad in deep plates or bowls if you don't like it warm, then drizzle with balsamic vinegar. Season with salt and pepper.
To finish, arrange the gnocchi alongside, sprinkle with the remaining parsley, and enjoy without delay!
