Discover this recipe for chorizo and leek pasta. A simple and delicious meal to reinvent risotto with small pasta!
Preparation of the chorizo: Cut the chorizo into diagonal slices and sauté it in a pot with a drizzle of olive oil over medium heat. Set aside.
Preparation of the onion. Peel and finely chop the onion, then sauté it in a pot over medium heat.
Preparation of leeks: Heat the broth. Slice the green parts of the leeks and then add them to the broth for 5 minutes. Drain. Cut the white parts of the leeks on a bias. Add them to the onions.
Cooking the pasta Pour the pasta into the pot and stir. Deglaze with white wine and then add half of the broth. Season with salt and stir until absorbed. Repeat the process until the broth is finished.
Finishing and serving When the pasta is cooked, add the leek greens and the parmesan. Serve with the grilled sausage.
