In a mixing bowl, add the flour, salt, and sugar.
Make a well in the center and pour in the lightly beaten eggs. Begin to gently incorporate the flour with a wooden spoon.
When the mixture thickens, gradually add the cold milk.
When the mixture is smooth, check that the batter is fluid enough. If it seems too thick, add a bit of milk.
In a double boiler, melt the chocolate and butter, stirring everything so that the chocolate incorporates easily. Then add the chocolate-butter mixture to the pancake batter and mix well!
Finally, cook the pancakes in a hot skillet. Pour a small ladle of batter into the skillet, make a swirling motion to spread the batter over the entire surface, place on the heat, and let cook for about a minute on each side.
To finish, the pancake is ready! Repeat this last step until the batter is used up.
