 3 Egg
 1 Plain yogurt
 3 Carrot
 1 Onion
 50 Lardon
 5 Olive oil
 1 Baking powder
 1 pinch Nutmeg
 2 Lemon juice
 2 pinches Salt and pepper
 1 Butter

Preparation of the vegetables: Peel the carrots and the onion. Wash them. Grate the carrots and slice the onion.

Cooking Sauté the vegetables and bacon in a pan with a tablespoon of olive oil for about 10 minutes.

Preparation of the dough In a bowl, beat the eggs. Add the yogurt, the remaining oil, the cheese, nutmeg, and lemon juice. Season with salt and pepper. Gradually add the flour and baking powder. Mix well, then add the vegetables.

Oven baking Butter a loaf pan and pour the mixture into it. Bake for 35 minutes at 180°C (thermostat 6). Check the cooking by inserting a knife in the center. The loaf is done if the knife comes out clean.

    Delicious, I made it with more carrots and no bacon, a little buckwheat flour, and mostly white rice flour (gluten-free cake version).

    Delicious! I cooked the carrots with some mushrooms and a red onion. I didn't have any nutmeg or lemon juice, but I seasoned it differently. Soft texture, yum. With whole wheat flour, it's hearty. Thank you.

    3 carrots I think that doesn't mean anything. So I went to check the weight of 1 carrot online which gave me 375g for 3 carrots. I cooked it for easily 15 minutes more. It still looks not cooked enough but it is very good, tender, and not too heavy. My little one, who is 2 years old, had several pieces, which is quite rare for vegetables!

    I made muffins with the same recipe, they were perfect with a salad. The best part was that the kids went back for seconds! It's way too rare with vegetables to go unnoticed :-)
