To add some energy to your recipes, grapefruit is the ideal citrus to enhance your homemade dishes, like this bulgur salad paired with peas and feta.
Bring a pot of salted water to a boil and cook the bulgur for 10 minutes (or follow the package instructions).
Drain and let cool.
Cook the peas in the same way for 5 minutes. Let cool.
Cut the feta into cubes.
Cut the grapefruit into segments.
Pour the cold bulgur into a bowl and add the peas, feta, grapefruit segments, parsley, mint, grapefruit juice, olive oil, salt, and pepper. Mix.
To finish, place in the refrigerator for 30 minutes before serving.
