Preparation of the turkey In a large oval pot, place the turkey thighs. Cover with cold water and bring to a boil over high heat. Skim regularly to remove impurities.

Preparation of the aromatics: Stick cloves into the onions and place them in the pot with the star anise. Add a bouquet garni and adjust the seasoning with coarse salt and pepper. Let simmer for 1 hour and 30 minutes over low heat.

Preparation of the vegetables Peel and cut the vegetables into medium-sized pieces.

Cooking Add the turkey breast to the pot with the carrots and let cook for 30 minutes. Add the other vegetables and continue cooking for an additional 45 minutes. Allow the broth to cool for at least 1 hour.
