First, prepare the burger bun by pouring 200 g of flour into the bowl of your mixer along with the water, sugar, and yeast, then mix using a wooden spoon. Cover the mixture with a clean cloth and let it rise for 20 minutes at room temperature.
Then add the rest of the flour, salt, powdered milk, and oil, and knead for 10 minutes until the dough is smooth, homogeneous, and comes away from the sides of the bowl. Cover with a cloth and let rise at room temperature for 45 minutes to 1 hour.
On a lightly floured work surface, divide the dough into several balls of 90 to 120 g, then place them on a tray lined with parchment paper. Cover the burger buns with a clean cloth, then let them rise a second time at room temperature for 30 to 45 minutes.
Gently brush the surface of the breads with beaten egg, sprinkle with sesame seeds, then bake in a preheated oven at 180°C for 30 to 40 minutes.
In the meantime, prepare the ground meat by mixing all the ingredients. Form patties and then cook them in a skillet with a drizzle of cooking oil.
In another pan, sauté the mushrooms with the spices and herbs for a few minutes, then set aside.
To finish, assemble the burgers by cutting the buns in half and placing on them some lettuce leaves, slices of tomato, a slice of cheese, the mushrooms, a patty of ground meat, and a good teaspoon of organic lemon mustard, then serve immediately!
