 100 Milk
 25 Soft butter
 25 Parmesan
 25 Breadcrumbs
 Fine herbs (basil, dill, parsley)
 Salt

Start by draining and rinsing the beans.

Prepare the butter for the scallops. Finely chop the herbs. In a bowl, mix the softened butter with the grated cheese, the chopped herbs, and the breadcrumbs. Season with salt and pepper. Form a log and place it in the freezer for 15 minutes.

Preheat the oven to grill mode at 250 degrees. Meanwhile, blend the beans, adding milk until the desired texture is achieved. Season.

Slice the herb butter and place a slice on each scallop. Grill the scallops in the oven for 3-4 minutes until the butter is browned.

To finish, serve immediately with the bean puree.
