 600 Monkfish (fillet)
 300 Paris mushroom
 200 Shrimp
 200 White wine
 100 Leek
 1 Yellow onion
 1 clove Garlic
 100 Thick sour cream
 25 Lemon juice
 20 Cornstarch
 15 Chives
 1 Saffron
 2 pinches Salt
 2 pinches Pepper
Directions

Put the peeled onion, cut into quarters, and the peeled garlic clove into the device. Blend for 5 seconds/speed 5. Add the sliced leeks and cook for 4 minutes/100 °C/reverse/speed 1. Add the white wine, salt, and pepper. Cook for 6 minutes/Varoma/reverse/speed 1.

Add 350 g of water and the fish stock cube. Place the cooking basket and put the fish fillets cut into cubes in it. Add the steaming tray and place the mushrooms on it. Place the shrimp on the steaming tray and cook for 20 minutes/steaming temperature/reverse direction/speed 1, then remove the steaming tray and the cooking basket. Set aside the fish, shrimp, and mushrooms.

Put the leeks aside and keep only the cooking juice in the bowl. Add the thick cream, cornstarch, lemon juice, and saffron. Cook for 5 minutes at 90 °C on speed 3 without the measuring cup.

Arrange the monkfish, shrimp, leeks, and mushrooms on the plates, drizzle with sauce, adjust the seasoning if needed, and sprinkle with chopped chives.
