I really enjoy cooking cabbage in a stew. I find that it pairs very well with smoked sausages. I also added some potatoes to have a bit of starch, and there you have a complete, flavorful, easy-to-make dish that everyone can enjoy. This dish can be prepared the day before, and all you have to do is heat it up before serving. It's convenient for weeknight meals when you don't have much time to cook.
Prepare all the ingredients. Peel and chop the onions. Peel the carrots and cut them into slices. Peel the potatoes and cut them into fairly large pieces. Finely chop the cabbage. Cut the sausages into slices.
Heat the oil in a large pot. Add the onions and carrots and cook for about 5 minutes, stirring.
Add the sausages and cook everything for another 5 minutes.
Add the tomato paste and cook for another 2 minutes, stirring constantly.
Add the potatoes and mix. Then do the same with the cabbage.
Pour the vegetable broth. Add the bay leaves and sage, salt, pepper, Espelette chili, and herbs. Mix well and cover.
Lower the heat to medium and let simmer for 50 minutes, stirring occasionally.
Taste and adjust the seasoning if necessary.
