An explosion of flavors for the cod tempered by the sweetness of the sweet potato puree (which is not lacking in character, however!). Plus, it's beautiful and vibrant to look at, which is a nice bonus!
* Peel and slice the shallot. * Peel the ginger and grate it. * Wash, dry, and chop the coriander.
* Prepare a marinade with the juice of lemons, tangerines, and clementines, honey, olive oil, shallots, ginger, and coriander. * Place the cod in the marinade. Let it rest in the refrigerator for at least 1 hour.
* Peel and wash the sweet potatoes. Cut them into large pieces. Cover them with water in a pot, add salt, and cook covered for about 20 minutes. Check the doneness with a fork; they should be tender. * Once cooked, pass them through a potato ricer or blender, add the butter and 2 tablespoons of cream, the spices, and keep warm.
Drain the cod and brown it on all sides in a hot, oiled skillet. Reduce the marinade in a saucepan and add it to the cod. Heat for 2 minutes.
To finish, serve accompanied by sweet potato mash and a bouquet of watercress. Place droplets of mandarin juice on the fish and the plate. ENJOY YOUR MEAL!
