Chinese dumplings (wontons) with turkey served with a spicy chocolate sauce.

Wonton dough
 300 Sifted flour

Preparation of the sauce (preferably the day before): Remove stems and seeds from the peppers. Grill them in an oiled pan without burning. Soak them in cold water for 1 hour (keep the pan for the rest of the recipe). Blend the drained peppers with 4 tablespoons of chicken broth. Add garlic, spices, 1 tablespoon of toasted white sesame seeds (the rest will be used for decoration), and peanut butter. Blend until a smooth paste is obtained. Sauté this paste in the lightly oiled pan for 5 to 6 minutes over medium heat. Add the remaining chicken broth and the broken chocolate pieces. Let it reduce over low heat for 20 to 25 minutes. Be careful not to let the sauce burn or stick, so stir occasionally.

Preparation of the dough: sift the flour and place it in a bowl with salt and black sesame seeds, arranging it in a well. Then, incorporate the eggs and pour cold water over everything. Mix the flour and other ingredients with your fingers or a spoon until the mixture forms a soft ball. Knead the dough in the bowl for 4 to 5 minutes, or until it is smooth but still soft. Do not overwork the dough, or it will become firm.

Preparation of the filling: blend the turkey, raisins, and almonds, then incorporate the egg. Season with salt and pepper.

Preparation of the dumplings: take 300 g of wonton dough. On a floured surface, roll out the dough thinly. You should almost be able to see the work surface through the dough. Cut out circles with a 10 cm diameter cutter. Fill with a heaping teaspoon of turkey filling. Moisten the edges with a little water. Fold to form a turnover and seal it using a fork.

Align the pastry on the fold to create the ravioli. I obtained 16 raviolis. Steam for 15 minutes, ensuring to place the raviolis spaced apart so they do not touch on parchment paper.

To finish the plate assembly: coat the bottom of the plate with the chocolate sauce. Arrange the ravioli on it (as you like, but a flower shape looks nicer). Accompany with the mixture of cucumber, radish, and red bell pepper that you will have garnished with finely chopped onion. Sprinkle the plate with the remaining toasted white sesame seeds. All that's left is to enjoy! It's truly a delight full of sunny flavors.
