Smoked Beef Stew with Sausage

Savor this smoked braised beef with sausage. A delicious dish, slowly simmered over low heat, flavored by the smoked sausage as it cooks, filling the kitchen and then the whole house with its aroma, prompting everyone who enters to say "it smells so good in here, are we eating soon?"... This dish is pure bliss, different from a stew or braised beef, the meat shreds with a fork, everything is tender... a delight!

Ingredients
 15 Chuck roast or blade roast
 1 Montbéliard sausage
 4 Carrot
 2 Onion
 4 cloves Garlic
 250 Fresh button mushrooms
 1 Herb bouquet
 40 Butter
 3 Peanut oil
 Potato
 Salt
 Pepper
Directions

Trim and cut the meat into cubes. Peel and slice the onions, peel and chop the garlic. Peel, wash, and cut the carrots into rounds. Cut the sausage into rounds or small pieces.

Sear the meat on all sides and the sausage in the oil in a pot. Remove them and in their place, sauté the onions, carrots, and garlic for 5 minutes. Return the meat and sausage to the pot, add the herb bundle, season with salt and pepper.

Pour the wine into the pot and let it simmer for 3 hours on low heat and covered. Clean the mushrooms, cut the larger ones in half, and sauté them in hot butter in a pan over high heat for 5 minutes. Season with salt and pepper. Add them to the pot at the end of cooking. Extend the cooking time by about 15 minutes.

Remove the herb bundle and serve hot with homemade mashed potatoes or potatoes that have been added to the pot after 2 hours and 30 minutes of cooking.
