Recipe for Red Turkey in the Westermann Style

Roasted turkey in the style of Westermann
 1 turkey of approximately 4 kg
 100 Butter
 4 olive oil
 salt pepper
Meatloaf-style stuffing
 chopped onions
 butter
 chives
 parsley
 hot milk
 2 eggs
 1 fresh cream
Directions

Roast turkey: Generously grease the turkey (which has been poached beforehand) with the oil and half of the butter, and put the other half inside the cavity. Season with salt and pepper.

Place the turkey on the roasting pan, slide it into the preheated oven at 180°C, and let it cook for an hour, regularly basting it with its own juices.

Once the poultry is nicely browned, place it on a cutting board and cover it with aluminum foil.

Serving: Carve the turkey, arrange the pieces on the serving platter, and place in the oven at 100°C for 10 minutes. Baste with the turkey's cooking juices.

The stuffing like Meatloaf: Chop the offal finely. Sauté in butter and set aside.

Melt chopped onions in butter and set aside. Chop chives and parsley.

Soak the warm milk bread and drain it, then crumble it. Mix everything in the bowl, then season with salt and pepper.

Add two eggs and a tablespoon of cream.

To finish, pour the mixture into a loaf pan and bake in the oven.
