Yields6 Servings
Prep Time20 minsCook Time40 minsTotal Time1 hr
White Babka Bread
 200 pizza flour type
 50 Manitoba wheat flour
 10 brewer's yeast
 150 milk
 20 butter
 5 sugar
 4 salt
(to make the black Babka bread, replace with 200g of mixed cereal flour)
Garnish
 100 Parma ham
 30 parmesan
Directions
1

Preparation for the Babka bread (same process for white and dark Babka): sift the flours, add the sugar, and make a well. Dissolve the yeast in the milk, then pour it into the well. Mix vigorously until the dough is well combined.

2

At the last moment, add salt. Add the butter cut into small pieces and knead until well incorporated. Let the dough rise covered until it has doubled in volume.

3

Sprinkle the square of white dough with grated cheese, place slices of ham on top, then cover everything with the square of black dough. Roll the square out to form a cylinder.

4

To finish, cut the cylinder in half lengthwise, then braid the two halves. Place everything in a greased rectangular cake pan. Cover and let it double in size. Bake in a preheated oven at 180°C for 40 minutes.
