Recipe for Fresh Goat Cheese and Basil Ice Cream

When we think of ice cream, we never consider savory ice creams, but it's a delight as an appetizer. I present to you this surprising starter! I made a goat cheese basil ice cream, which I placed on a tomato sauce coulis. I also made puff pastry breadsticks flavored with oregano.

 275 Liquid cream
 1 Egg
 130 Fresh goat cheese
 15 flower honey
 Basil leaf
 Flower of salt
 Cameroon bird pepper
 3 meaty tomato
 ½ Onion
 2 Olive oil
 Thyme
 Bay leaf
Directions

1 - Heat honey and liquid cream in a saucepan. 2 - Place the egg yolk in a mixing bowl and pour the boiled cream over it, mixing well. 3 - Return to heat and bring this mixture to 89°C, stirring continuously to prevent it from sticking to the bottom of the saucepan. You will obtain a very tasty and creamy custard, and it should be thick. 4 - Crumble your fresh cheese into a mixing bowl and pour the custard over it. It will dissolve, and if there are small pieces like lumps, it's normal. 5 - Lightly season with salt and pepper and let cool before churning.

1 - Blanch and core your tomatoes, then cut them into pieces. 2 - Cook your onion in a pot with olive oil, thyme, and bay leaf, add a little salt and pepper, and cook until reduced. 3 - Let your tomato sauce cool completely. 4 - If you have time, you can make your own puff pastry; otherwise, ask your local baker to sell you a small piece, or purchase it from a store. 5 - Cut strips of puff pastry and make twists, sprinkling them with oregano, poppy seeds, a little salt, and pepper. Sprinkle with herbs you like, and there you have a lovely appetizer.
