Tuna Parmentier, an original and refined recipe with Mediterranean flavors.
Cook the potatoes for the mashed potatoes.
In a mixing bowl, pour in the tuna without oil and flake it. Coarsely chop the capers, black olives, and tomato petals. Add them to the tuna, then incorporate a little oil from the can. The mixture should not be liquid but also not dry. Do not add salt, but you can season with a little pepper. Divide into small dishes.
Heat the milk. Pass the potatoes through a ricer, then incorporate the butter cut into pieces, followed by the milk. The consistency of the puree should be quite thick. Season with salt and add a bit of grated nutmeg. Transfer to a piping bag with a large nozzle. Pipe onto the tuna.
To finish, grate the cheese and spread it over the mash. Place it under the broiler for a few minutes in a preheated oven at 200°. Serve immediately.
