Today I am offering you a recipe for skillet breads that are very similar to stuffed flatbreads. They are a type of bread generously filled with cheese, made with a fermented milk-based dough. It’s very indulgent and super tasty! A delicious alternative to pizzas, savory tarts, and crepes. These breads are quick to prepare since the dough doesn’t need to rise. In terms of preparation, it resembles Indian cheese naans a bit. They can be served on their own or alongside a dish or a salad. It's delicious.

Dough:
 300 buttermilk
 1 Egg
 1 Salt
 1 Sugar
 3 Sunflower oil
 11 Baking powder
 500 Flour, plus a little for working the dough.
Garnish:
 400 Grated cheese (mozzarella for me)
 1 Egg
 Salt to taste
 Pepper to taste
In addition:
 20 Butter

Prepare the batter. In a bowl, mix the fermented milk with the egg, salt, and sugar with a fork. Add the oil and mix to incorporate it.

Add the baking powder, then gradually add the flour and mix first with a fork, then knead by hand to obtain a soft, smooth, and non-sticky dough.

Cover and let rest for 10 minutes at room temperature.

On a floured work surface, divide the dough into 4 equal pieces and shape them into balls. Cover and let rest for another 10 minutes.

Meanwhile, prepare the filling. In a bowl, mix the grated cheese with the egg, salt if desired (depending on the cheese used), and pepper. Divide into 4 equal portions and shape into balls with your hands.

Prepare the bread. Roll out the first piece of dough (slightly thicker at the ends than in the middle) to make a circle about 15 cm in diameter. Place the ball of cheese in the center and seal the edges to enclose it inside.

Turn it over so the sealed side is facing down and carefully roll out to form a circle about 20 cm in diameter. Set aside on a lightly floured board.

Prepare the other breads in the same way.

Heat a non-stick skillet over medium heat. Cook the breads covered for a few minutes on each side, until they are golden brown.

To finish, place on a plate and brush with a little butter.
