Today I offer you a complete dish of shrimp pasta, with Mediterranean flavors. To enhance this dish, I added marinated anchovies, capers, and olives, all resting in a tomato sauce flavored with basil and oregano.
Cook the pasta al dente according to the package instructions. Drain them.
Heat a large skillet with the anchovy oil. Add the shrimp and cook for 2-3 minutes or until they turn pink.
Add the chopped garlic and cook for another 30 seconds, stirring.
Add the anchovies (after reserving 12 fillets for presentation), the capers, the olives, the oregano, the basil, the salt, and the pepper. Mix well to combine everything evenly.
Add the grated cheese and mix well until it melts.
Add the pasta and the tomato pulp. Mix well and continue cooking for 2 minutes to heat the pasta thoroughly.
To finish, sprinkle with fresh basil and serve immediately.
