Recipe for Crepes with Clementine Sauce and Whipped Cream

Just because the holiday is over doesn't mean we shouldn't still enjoy pancakes.

 50 Milk
 3 Eggs
 2 cups sugar
 vanilla extract
 Water ingredient
clementine sauce
 4 cups sugar
 1 agar agar
Whipped cream in a siphon
 50 Sour cream 30

Prepare the whipped cream with clementine. Squeeze the clementines to collect 250 ml. Strain if necessary. Mix the liquid cream with the sugar and the juice. Pour into the siphon, close it, insert the two gas cartridges and shake. Refrigerate horizontally for 2 hours.

Prepare the pancakes. In a mixing bowl, combine the eggs with the flour. Gradually add the milk to break up any lumps. Add the sugar and the vanilla extract (or flavoring or alcohol of your choice). Let it rest for at least 1 hour.

Prepare the clementine sauce. Squeeze the clementines. Heat this juice with sugar and agar-agar until the sauce thickens. Let cool.

To finish, prepare the assembly. Place 2 pancakes on each dessert plate. Add 2 to 3 tablespoons of sauce and top with swirls of whipped cream. Decorate with segments of tangerines.
