Ingredients
 340 Wild blueberries from Canada
 750 Red onion
 2 Olive oil
 150 Brown sugar
 2 Salt
 150 White balsamic vinegar
 1 stick Cinnamon

Drain the blueberries and collect the juice. Peel the onions and slice them thinly. Over medium heat, sauté the onion slices in olive oil, stirring. Add the sugar and salt, mix, and let everything cook for 5 minutes. Deglaze with balsamic vinegar, add the blueberry juice, and incorporate the cinnamon stick and herbs.

Simmer uncovered for about 40 minutes, stirring occasionally. Add the blueberries and simmer for about 10 minutes until thickened.

To finish, rinse the jars and lids with hot water, fill with jam, close, and let cool.
