A lovely culinary meeting between the East and the region. A recipe featuring local sausage.
Slice the sausages into thin rounds and sauté them in olive oil.
Add the apricots, raisins, and prunes along with the cinnamon stick. Drizzle with honey and add 200 ml of water. Let it simmer for 10 minutes.
Add the almonds and the olives, then let simmer for another 10 minutes.
To finish, before serving, salt and pepper the tagine, then sprinkle with chopped coriander.
