Recipe for Tenderloin with Mushrooms and Yuzu

A nice little dish baked in the oven.

Ingredients
 250 Brown Paris mushrooms
 Salt
 1 Shallot
 2 Yuzu
 1 Madras curry
 rice
 5 Sliced almonds
 1 Lemon
 1 Butter
 Pepper

Season the tenderloin with salt and pepper and wrap it with bacon. Preheat the oven to 200 degrees.

Place the tenderloin in a baking dish. Surround it with the chopped shallots and the mushrooms cut in half or quarters.

Generously sprinkle with yuzu, at least 2 tablespoons. Pour the glass of wine. Pepper and sprinkle with a spoonful of curry.

Bake for 30 minutes. Turn the filet halfway through cooking and baste occasionally. At the end of cooking, slice the meat and return it to the sauce.

Meanwhile, cook the rice according to the manufacturer's instructions, with a broth cube in the water. Drain it and mix it with the almonds, butter, and lemon zest.

To finish, serve and garnish with chopped chives.
