Pork Roast with Prunes Recipe

A great classic, perfect for a small dinner with friends.

Ingredients
 800 Boneless pork tenderloin
 200 Pitted prune
 3 Butter
 1 Chopped onion
 2 cloves Chopped garlic
 1 Chopped fresh parsley
 2 Chopped tomato
 20 White wine
 Salt
 Pepper
Directions

Using the handle of a wooden spoon, make a lengthwise hole in the pork tenderloin. Stuff with prunes. Tie the roast with kitchen string. Salt and pepper.

Brown the roast in butter on all sides over medium heat (be careful not to burn the butter). Transfer the meat to a baking dish.

To finish, preheat the oven to 190ºC. In the fat that was used for the roast, sauté the onion, garlic, and parsley until golden. Add the tomato and white wine. Bring to a boil and baste the meat with this sauce. Cook in the oven for 30 minutes.

    Easy to make and well done. I also soaked the prunes in wine, which added more character to the sauce. Next time, I will add mushrooms and mustard to vary things a little.

    I made this recipe yesterday, doubling the quantities and cooking time to 1 hour and 30 minutes for 1.6 kg. It was a delicious dish; it was the first time I had such tender pork roast, a wonderful dish that was greatly appreciated; people are asking me for the recipe!!

    Hello. Easy recipe to make. Before stuffing my meat, I soaked the prunes in white wine, and 10 minutes before the end of cooking, I added 4 quartered apples and 10 prunes. Excellent recipe, yum yum. Thank you.

    Delicious! Not having any wine, I used about 100 ml of rum and it was (OMG) super good, maybe it's a good solution for those who found the wine too strong.
