Tuna Rice with Tomato Recipe

A very simple and rather quick recipe for a complete meal.

Ingredients
 300 Rice
 2 Tuna
 2 Chopped tomato
 2 Large onion
 2 cloves Garlic
 2 Egg
 Olive oil
 Oregano
 2 Sugar
 Salt
 Pepper
Directions

Chop the garlic and the onion. Sauté the onion in a pot with olive oil until it becomes translucent. Add the garlic during cooking only to prevent it from burning.

Add the tomato, mix, and bring to a boil. Season with salt and pepper, then with sugar because canned tomatoes are very acidic. Let reduce for about 10 minutes. Then add the tuna to this tomato onion mixture.

Meanwhile, cook the rice in boiling salted water. Cook the eggs until hard.

To finish, mix the rice and onion mixture. Cut the eggs and place them on top of the dish.

    I didn't have any rice, so I replaced it with spaghetti, and since I didn't have tuna, I used bacon. I substituted the tomato with parmesan, and it was great.

    I used only one can of tuna, organic and fair trade basmati rice, and tomato puree so that I wouldn't have to sweeten the dish.

    Tuna Rice with Tomato Excellent, easy and quick! Will make again! My suggestion: I used tomato sauce instead of crushed tomatoes with a little powdered sugar, it was delicious.
