Here is a quick recipe for pancakes with grated apple, perfect for breakfast or a snack, an express version with no resting time and very easy to make. Here, we have created a low glycemic index version using fructose and whole spelt flour, which explains the brownish color of our pancakes, but you can use the flour of your choice, with or without gluten.

 1 Apple
 100 Flour
 10 Milk
 2 Egg
 1 Baking powder
 50 Powdered sugar (or 20g of fructose)
 1 Cinnamon or vanilla
 Unsalted butter

In a mixing bowl, combine the sifted flour, baking powder, sugar, and cinnamon. Add the eggs and mix everything well before pouring in the milk.

Peel the apple and grate it directly over the mixing bowl. Mix.

Melt a small amount of butter in a large skillet and place a tablespoon of the previous mixture for each pancake. Depending on the size of your skillet, you can cook three to four pancakes at the same time. As soon as small bubbles form on the sides and the top of your pancakes, flip them over and cook on the other side for about a minute.

To finish, proceed this way until the batter is used up. For added indulgence, enjoy your pancakes with maple syrup, honey, or, as here, agave syrup.
