Today I offer you a new salad recipe. With this heat, salads are on the menu every day. This salad is fresh, light, yet still quite complete and nutritious. It can be served as a starter, as a side dish with grilled meats, or even as a light main course, with melon as a starter, for example, and a bit of cheese to finish.
Wash and dry the cucumber and the tomatoes. Peel the eggs.
Cut the cucumber and tomatoes into 1/2 slices. Cut the avocados into pieces. Place in a large mixing bowl.
Cut the eggs into quarters and set aside on a plate. Finely chop the parsley.
In a small bowl, mix all the ingredients for the dressing. Pour over the salad. Toss well.
Add the egg wedges on top and sprinkle with parsley.
To finish, serve immediately.
