The dumplings
 2 pan-fried dumplings
 4 of raw ham Fine and tender Label Rouge
 1 dash olive oil
 4 zucchini
 1 clove Garlic
 2 shallots
The sauce
 250 curd cheese
 30 thick sour cream
 1 shallot
 1 clove garlic
 2 olive oil
 1 wine vinegar
 1 pinch gray salt
 Freshly ground pepper

Peel the garlic and shallot. Wash the bunch of chives, dry it, and then finely chop. Place the cream cheese in a bowl. Add the sour cream and whisk everything vigorously. Add the olive oil, vinegar, salt, pepper, and chives. Reserve for at least 1 hour in the refrigerator before serving.

Wash and peel the zucchinis. Cut them into cubes and set aside. Crush the garlic clove with the palm of your hand. Peel and finely chop the shallot. In a pan, pour a drizzle of olive oil, add the crushed garlic, then the zucchinis. Season with salt and pepper and let cook for about ten minutes.

To finish, pour a drizzle of olive oil into a skillet and then add the ravioli. Cook for a few minutes over medium heat until nicely browned. Place the ravioli on each plate. Season. Add the cream sauce, the diced zucchini, and then finish by placing your tender and flavorful pieces on top. Garnish with sprigs of chives. Enjoy immediately.
