Stew Recipe in the Style of a Feijoada

Feijoada is a Brazilian and Portuguese dish made with black beans and pork meat, but also includes cabbage and cassava flour, the preparation of which is quite lengthy and the ingredients not necessarily easy to obtain. I adapted it to capture the idea but with a very limited preparation time...

Prep Time20 minsCook Time2 minsTotal Time22 mins
Ingredients
 4 Cooking sausage from Montbéliard
 600 Beef
 1 Spicy chorizo
 800 Red bean
 1 Herb bundle
 1 Paprika
 Olive oil
 Coriander
 4 Organic orange
Directions
1

Cut the braising meat into cubes. Cut the bacon into slices. Remove the skin from the sausage and cut it into slices. Sauté the cubes of meat in a pot with a little hot oil. Add the slices of bacon and sausage. Pour in water to cover and add the herb bundle. Bring to a boil, then let simmer covered over low heat for 1 hour and 30 minutes.

2

Rinse the red beans and drain them. Add the paprika to the pot along with the sausages and the beans. Let it cook for another 30 minutes; the sauce should become creamy. I do not add pepper or salt (the ingredients do that for me), and it is still well-seasoned.

3

Peel the oranges and cut out the segments. Serve warm, sprinkled with washed and chopped cilantro, and present the orange segments separately for everyone to serve themselves as they wish.

4

To finish, enjoy your meal!
