We love serving these caramelized melon skewers for a fruity appetizer!
Make melon balls using a melon baller. Carefully dry the melon balls with paper towels.
Skewer the melon balls onto wooden skewers, then set aside.
Pour the sugar into a heavy-bottomed saucepan, add mineral water, a teaspoon of lemon juice, and place it over low heat. Cook without ever stirring until an amber caramel forms.
Remove from heat immediately and add the remaining lemon juice to stop the cooking of the caramel.
Dip the melon balls in liquid caramel. Then let the melon balls harden in a dry place.
To finish, roll the balls in sesame seeds, poppy seeds, or finely chopped fresh mint, etc.
