Preparation of the ingredients Preheat the oven to 180 °C. In a baking dish, place the shanks and drizzle with oil. Season with pepper, salt, and add bay leaves and thyme.

Cooking Place the dish in the oven for 1 hour and 30 minutes. Baste regularly with the cooking juices and turn halfway through cooking.
