 800 Pork roast
 1 Pineapple in syrup
 3 Oil
 30 Butter
 2 Onion
 1 clove Garlic
 4 Rum
 Juice of half a lime
 1 Chicken broth
 3 Water
 Salt
 Pepper
Directions

Take the pineapple slices and drain them, then cut them into pieces.

Heat the oil and butter in a pot. Sear the roast until it is golden, peel and slice the onions and garlic.

Remove the roast and brown the onions over high heat. Add the pieces of pineapple until they are lightly caramelized.

Put everything back in the pot for 2 minutes. Pour in the rum and flambé. Add the lemon juice and chicken broth, season with salt and pepper.

To finish, let it simmer for 1 hour, turning the meat halfway through cooking.

    A true success!!! Initially, I’m not a fan of sweet and savory dishes, and this recipe reconciled me with this type of meal... the fact that the rum doesn’t flambé doesn’t change anything (I manage to do it every other time). Personally, I served it with fresh green beans. In short, I highly recommend this recipe, preferably with half a fresh pineapple... :-)

    Pork Roast with Pineapple Excellent sweet and savory recipe... that I served accompanied by sweet and savory potatoes and a "Batavia" salad dressed with a vinaigrette (cider vinegar with apple juice and shallots). My suggestion: None, the recipe, easy to make, stands on its own.

    Very good Thank you for this recipe that everyone enjoyed and savored. I only heard "mm, this is good." My suggestion: I just thinned the sauce a bit with a glass of pineapple juice, some water, and a spoonful of cream to serve with basmati rice.

    Great! Very good. I made this recipe with a fresh pineapple (in season), a true delight. My suggestion: Next time, I will add some sliced almonds.

    Excellent! As great lovers of sweet and savory, we really enjoyed it! The onions (slightly tangy) pair very well with pineapple. The aroma is very subtle in this recipe. My suggestion: I just added a little bit of sweet white wine that I had left, and a splash of cream that I also had left. Just enough to transform the pure juice into a very slightly coating juice. I served it with some tagliatelle. It was perfect. Thank you!
