Zucchini is cut into tagliatelle and seasoned with olive oil, lemon, a bit of red chili, and mint. This salad is very fresh and light. Ready in 10 minutes, it is perfect for summer meals.
Grate the lemon zest and set aside. In a bowl, pour in the lemon juice and olive oil. Add the chili chopped into very small pieces, salt, and pepper. Finely chop the mint leaves and add them to the dressing. Mix well.
To finish, wash the zucchini, cut off the ends, and do not peel them. Using a vegetable peeler (or a mandoline), create tagliatelle by slicing the zucchini into long strips. Place them in a bowl, pour in the mint dressing and lemon zest, and mix. Serve immediately.
