Today, I offer you crispy baked calamari rings. A dish that is very easy and quick to make and light, as it contains almost no fat. They can be served as an appetizer or as a main dish. A delicious alternative to fried calamari fritters.

 650 squid rings
 Olive oil
 1 lemon for serving
Breaded
 120 Corn flour
 1 garlic powder
 1 Provence herbs
 1 Salt
  Pepper

Preheat the oven to 200°C, fan mode.

In a bowl, mix all the ingredients for the coating.

Place the squid rings in a 3-liter zip-top freezer bag. Add the breading on top. Seal the bag and shake well to coat all the rings in the breading.

Spread the rings in a single layer on a baking sheet lined with parchment paper. Drizzle with a little olive oil.

Bake and cook for 20 minutes or until the calamari are golden. If you have thinner calamari, cooking may take less time.

To finish, serve immediately, accompanied by lemon wedges.

    I followed the instructions but made a slightly different mixture for the breadcrumbs: 20g of whole breadcrumbs, 25g of crispy breadcrumbs, 20g of corn flour, 10g of grated cheese, crushed toasted bread, salt, pepper, sweet and hot paprika, onion, garlic, and shallot powder, 2 grated garlic cloves, and 1/2 lemon zest. Much better than store-bought or restaurant-served breaded squid (where there is as much, if not more, breading than squid...) Tip: choose thin, medium-sized rings, space them well on the baking sheet, continue cooking until they are a bit crispy, use little oil to avoid softening the breadcrumbs, and be generous with spices and herbs. Serve with vegetable pasta (zucchini, bell pepper), sprinkled with the cooked breadcrumbs that did not stick to the squid, a squeeze of lemon, and fried parsley. Really delicious, thank you for the recipe!
