Discover this light cherry jam recipe. Perfect for serving with a slice of bread or brioche, this jam also pairs well with plain yogurt or in cake recipes.

 300 Special jam-setting sugar

Preparation of the ingredients. Wash and pit the cherries. Wash and scald the jars.

Prepare the fruits. Mix the cherries and sugar in a large pot.

Cooking Bring everything to a boil over medium heat, mixing the sugar well with the fruit. Once boiling, cook for at least 3 minutes, stirring continuously. To check if the jam has set, drop a few drops on a very cold plate. If the jam holds, it is ready.

To finish, jar immediately. Close the lids securely. Turn the jars upside down for 5 minutes.

    Too sweet I simply used cane sugar. My cherries were very ripe, without being overripe. The jam is really too sweet. I will wait for apple season and use my 19 jars again; I hope it will work out.
