To give as a "gourmet gift," decorated with a beautiful label in Christmas colors. For six medium-sized jars or four large ones.

 40 Organic apple juice
 260 Sugar
 5 Pear
 2 Apple
 2 Ground cinnamon
 ½ Ground ginger
 60 Candied orange
 14 Date
 6 Prune
 6 Dried fig
 12 Dried cherry
 12 Dried apricot
 60 Nut
 60 Hazelnut
 1 clove Vanilla
 1 Zest and juice of yellow lemon
 2 Orange zest and juice
 4 Rum
Directions

Place in a large saucepan: the sugar, the juice and zest of the lemons and oranges, the vanilla (split the pod), the apple juice, and the spices. Peel and dice the apple and pears and add them to the saucepan.

Dice the dried and/or candied fruits, separating the hazelnuts and walnuts.

Heat the pot to a gentle boil, add all the fruits except the hazelnuts and walnuts. Cook for about 15 minutes.

To finish, add the nuts and the rum. Cook for another 15 minutes. Pour the still boiling jam into sterilized jars. Close immediately and turn the jar upside down to create a vacuum. Do not touch until the next day. Store in a cool place.
