Pork shoulder in sauce: the easy recipe

Here is an easy and quick recipe for cooking a whole pork shoulder. Cooking it in a pot ensures the meat is very tender (more so than in the oven or in a frying pan). The pork is cooked with potatoes, carrots, leeks, and mushrooms. You can also add a little mustard sauce if you like.

 800 Pork neck
 4 Carrot
 1 clove Garlic
 200 Mushroom
 8 Shallots
 1 Leek
 4 Potatoes
 30 White wine
 1 Thyme
 Olive oil
 Salt
 Pepper

Cutting the pork Cut the pork shoulder into pieces.

Cooking the pork
Cook the pork shoulder pieces on all sides in a pot with a little oil. Remove from the pot and set aside.

Cooking the vegetables In the same pot, sauté the sliced leek, then add the mushrooms and minced garlic.

Add the other vegetables. Then add the peeled and cut carrots, followed by the peeled but whole onions. Continue cooking for about 5 minutes.

Add the thyme and the wine, and let it reduce by half.

Stewing Add the pork, pour in the broth, season with salt and pepper, and let simmer covered for 1 hour.

Add the potatoes. Remove the lid and continue cooking for 30 minutes. Add the peeled potatoes and continue cooking for another 30 minutes before serving.
