 300 Arborio rice
 1 Onion
 1 Chicken broth
 2 Parmesan

Preparation of the vegetables: Wash the leeks and cut them into small pieces. Peel and finely slice the onions.

Cooking the Vegetables Pour 2 to 3 tablespoons of olive oil into the bottom of a pot and sauté the leeks and onions until they are very tender. Add a little water if necessary. Season lightly with salt and pepper.

Cooking the risotto Meanwhile, heat 1 liter of water with the broth cube. When the leek is well cooked, add the rice and sauté it for a few seconds, then add the first ladle of broth. Stir until the broth is absorbed, then add another ladle of broth. Continue this process until the rice is creamy and slightly al dente. You may need more or less broth depending on the quality of the rice and the level of doneness you prefer.

Seasoning At the end of cooking, add the cheese, adjust the seasoning, and serve immediately!

    I love this recipe! I've made it over and over, and we enjoy it every time! Personally, I cook the onions with the leek, and it works very well that way.

    It's with the simplest recipes that the best dishes are made. This one is no exception. (And for those wondering what to do with the onions, I completely forgot them... and it didn't make a difference at all :-p)

    Very good, we enjoyed it, I didn't know what to do with the leek I had left in my fridge, and thanks to you, the solution was found quickly and easily. It's a recipe I'm going to keep. Not having rice, I made it with wheat, and the result was honestly delicious. You just forgot to mention in your recipe when to cook the onions, but I assume it's at the same time as the leeks.
